I've been bbqing on a weber kettle for 8+ years and have made some amazing bbq thanks to both of you. Had a couple cheap offsets that rusted out. This "how to" is amazing because I've been debating on buying a pellet grill vs a legit smoker (lone star grillz, since it's close to me). Much love Mark and Malcom! Same here. For 7 years or so, i've also been using the kettle for bbq with the snake method then the slow n sear and it always works great. Sometimes temps can be finicky which is why I got lured into pellets...for when im lazy. But I just decided to get a pellet pooper to see what this is all about. I got the grilla grills chimp since it's just me and the wife. But, still big enough for whole spares , 15 pound brisket etc. Not gonna cook for a party but... I was also curious about a gravity fed charcoal smoker like the char griller but just got the chimp. I noticed that the lower the temp you cook at, the smokier and barkier the food is. Did some beef short ribs for 8 plus hours at 225 and they were barky, smoky and very good.
