Hi Eric , you should add cucumbers to the ceviche. Have you ever tried Agua chiles ? It’s pretty much shrimp, cucumbers,onions and homemade salsa verde. You have to make the salsa verde spicy so you can get that kick in when making them I recommend you adding mango as well. Love your videos btw 💗

Ive seen the Luigis owner in so many videos and hes the same in every single one. Just a nice business owner that respects his food. A lot of other people you see are just nice when its a show or food personality, but actually being nice to random customers is the difference.

For ceviche cutting everything in much smaller dices will allow the flavors to come together, also try using shrimp instead of fish
