Depending on the kashigata (mold), we make fresh confections such as Nerikiri Wagashi or dry confections such as Rakugan. I might make some videos in the future, but the ingredients for Rakugan is probably not available outside Japan. The Nerikiri Wagashi Class can be taken online if you are interested. I’m back to this video again haha,, I managed to buy all the tools you mentioned in this video (finally) but I also felt like buying readymade white bean pastes that my country’s e-commerce app has since I’m a beginner,,, but I also wanted to make a lot for my family and close cousins to try. When I asked the seller a few questions, they didn’t really gave me an answer me so I thought of asking you haha :) Here’s my question: 1) if I were to use a 80g container for wagashis, what’s the ratio for the white bean paste and the red bean paste? 2) around how much readymade white bean pastes do I need to buy if I were to make around 20 wagashis? The sellers I know we’re selling in one pack = 1kg 3) I’m not sure which food colouring I should use for wagashi :( I wanted to buy natural powdered colourings like beet root powder, pumpkin powder, etc. but I’m not sure if it’ll work or not. Hi, the amount of bean paste depends on how big you want to make each piece. Usually we use 20-30g for the dough and 15-20g for the filling as we need to fit it into the wagashi case. You can use food powder to color the dough, no problem. If you want to know more in detail, please join my online wagashi class!
