I have not canned meats yet. Closes ive gotten is stew or Soups. I need to do some up, but I lack shelf space! 😂 Opposite to many out there! I had 3 big freezer fulls get trashed, 3 different times in a row. UGH! I now have 4 big freezers full! Been busy, I have! Lol. But my shelves are full, the room itself got turned into the Junk Room, so I can't get to my canned foods. So I am not eating it up! (I guess I really am into Prepping, since i can't access the jars!)
Anyway, I recall my MIL years ago, serving canned meats. It was always yummy! And she was a very boring cook! NO Seasonings at all, but salt or pepper!
Sometimes life has a way of doing things for us lol
I also end up bringing good sales home, and then remember I had too much already when I go to put it in the freezer 😂
I've never done bone in chicken, but I really should try a batch. The way this comes together so quickly plus lower processing time would be nice for a weeknight project.

The Food Lion near me sells frozen 10# bags of chicken legs and thighs for $8.90/bag. I can these for me AND for my cats. (At $0.89/lb, these can really help feline nutrition when times get bad.) I also do these for broth and I don't know why I have never thought of adding the ACV ! You're right! Thanks

Not at all! USDA states that as long as the door is half with liquid, you are completely safe
You can also grind the bones for bone meal.

I have canned chicken drumsticksbut have to remove bones when eating. I would try again if I could get done less drumsticks. Of course it was my fault. I tried to fit them into pint jars so I had to chop the bones. Mix mistake.
