For as long a s I can remember, Shark Ginger soup has been a delicacy in Bataan. This dish is very popular during the Lenten season, not because it has a spiritual connection but it's mainly because these sharks abound the waters of the Bataan peninsula during the months of March and April. It is the Liver of the shark that is most sought after (aside from the fins and meat of course. here we don't throw anything. We cook everything from snout to tail) and it is during these months that the liver of this shark is at its largest.
