How to Make: Pour Over Coffee with an Origami Dripper

    Grind size : medium fine
    16 gr coffee
    255 gr water at 88 C
    First pour (bloom)
    60 gr of water in concentric circles let it bloom for 1min
    Second pour
    100 gr of water . Add it all within 10 seconds of starting
    Third pour
    @ 1:45
    95 gr of water for a total of 255gr
    You can change the total in the last pour
    240 gr total for a strong brew
    265 - 275 for a gentle brew
    Medium acidity
    Medium sweetness
    Low bitterness
    Well balanced

    i was baffled when he didn't use the Timemore Slim hand grinder and went straight for the ek43. great video though.

      Around 2-3 weeks off roast, or 6 days for Ikawa roast

      Really depend on the coffee. In that competition, it was 5 days off roast. Most other coffee will be around 2 weeks.

    I couldn't stand that holder. My dripper never sat flush which caused uneven extractions. I just bought the plastic one with the groves so the dripper sits flush

    What ratio are you using ? In asking because i want to use this recipe for 500ml

      It was 1:16. but for 500ml, 1.16.7 would probably better. Try 30g coffee to 500ml water.

    Nooooooooooo! If you let all the water drain through after the second pour your slurry temperature drops like a rock!

      Relax it's fine. This is a competition recipe so he is looking for a juicer cup for the judges. Temperature drop will result in more juiceness and acidity.

      It's definitely audible on my phone. Quiet but audible for sure
