You can’t even go off-road like that normally without using a Mushroom. I’m not convinced, lol.
The off-road snaking without losing speed is a technique known as PRB (Prolonged Rocket Boost), which involves tricking the game into maintaining the perfect start boost state. There are a few turorials on RUclips which cover it.
