Would you recommend I bake this bread the day before and reheat it in the morning or am I able to put it in the fridge after assembling and leave it overnight (like the cinnamon rolls)? thank you again!
I have made the big one. Which was a real hit with neighbors and friends. This time I cut the dough in half after proofing and made two. One raspberry and cream cheese And the other with a chopped up apple and apple pie filling with cream cheese. They’re still big. Just not huge. And still incredibly delicious

What is the reason for using a stiff starter in this recipe?

You could for sure, I only do it for an improved and more mature flavor of the dough and convenience to control the proof more
