    What is the reason for using a stiff starter in this recipe?

    Looks amazing! Is there a reason you put it in the fridge for the final proof? Could you proof at room temperature for a shorter amount of time?

      You could for sure, I only do it for an improved and more mature flavor of the dough and convenience to control the proof more

    thank you for this recipe! I have a very large family and want to make this and your cinnamon rolls for Christmas morning! Would you recommend I bake this bread the day before and reheat it in the morning or am I able to put it in the fridge after assembling and leave it overnight (like the cinnamon rolls)? thank you again!

      I have made the big one. Which was a real hit with neighbors and friends.
      This time I cut the dough in half after proofing and made two.
      One raspberry and cream cheese
      And the other with a chopped up apple and apple pie filling with cream cheese.
      They’re still big. Just not huge.
      And still incredibly delicious

      You can easily knead this by hand

      Cream cheese with your favorite cured meat and you could also add some Parmesan and mozzarella and some pesto on top
