Okay! As someone who's worked food in america for 25+ years, I can actually explain this! It starts with: Japan and America have VERY differing food laws in regards to chicken, pork, fish, and ESPECIALLY raw fish and fish products. This means that what passes in Japan, will not always pass food safety inspection in America. (This is true of many countries, and mostly has to do with the production, shipping and handling stages: we have regular fish, and 'sushi grade' fish, as one example. Also keep in mind taht food safety regulations have only become [it's a good thing] more stringent and harshly dealt with since the C-virus.) Another contributor is the fact that, as cultures mix here (being a country of mostly and founded *entirely* by immigrants and refugees,) recipes for things like sushi continue to evolve daily; while adhering to those guidelines (well, adhering to them if you don't want to get shut down ASAP and or sued when someone gets sick anyways.) The result is: we do not always have the same ingredients, and in some cases, what foods or food grades might be used in Japan often are either no used, or not popular enough to use consistently without the business operating at a loss that will eventually shut that company down. What Shoto has there is, actually a very common pre-packaged combination of an adapted California Roll recipe, topped with caviar/fish eggs (Probably Tobiko [flying fish egg] or Masago [more likely this one, which is a mix of different kinds] but: pre-packaged sushi has even more food safety rules and ingredient limitations, for some obvious reasons: think of it like 'convience store' Sushi: there are some exceptions to pre-packaged, but eh that's an even longer explaination.) Also.. that isn't exactly the best picture. I can tell his phone color settings are a little low on saturation, or he forgot to turn off the flash with a pic that close. XD But yeah, if you look, you CAN see both the regular tuna and yellow tail wrapped into the roll, under the caviar. Ultimate answer to what kind of sushi this is, IS: California rolls, with small fish eggs for color/topping.
@@CompSomAnichi late but.. *mostly* because mess hazard, after purchase..? most sushi of this kind gets stuffed in a bag and then eaten by hand (in my experience; a lot of people forget or don't bother with chopsticks with this kind etc) meaning: caviar on the outside rather than as a topping can get everywhere, even before you open the box if you don't carry and transport it carefully: and will easily make a mess of the customer's hands too. there's also the wasteful factor; as, resulting: the caviar ends up more on a napkin or the inside of the box than in your mouth, with that in mind... and caviar of any kind is *not* cheap for either party, here.

There are definitely cases of ex-company livers signing with another company after their past life. The main two that come to mind being K-san and Nezuna of VShojo. Though the chances of U-san signing with another company is low, the chances of them continuing as an indie is entirely possible
