      @@beingwinston It's not that the rest of us don't know or have not experienced other types of coffees... It's the mere fact that a filtered coffee for South Indians just smells of home and is close to heart, and it invokes emotions that none other can (coming from a person who makes a Starbucks run literally everyday of her life).

    For decoction to be strong thick and full of flavour, you need to add 1/3 of the vessel coffee powder and pour water till the round ridge marking where the lid goes and rests in the filter. And press the powder lightly with the partition given in the top vessel.

      ​@@anjalimishra-gt2br then u have to choose a small filter size and buy , that's just enough for one person. Filter coffee making is an art that has to be made and perfected to get the right flavour. It depends on so many factors like the right blend of Pibary and Plantation A varieties of ciffeepowder, for getting the flavour and colour of the decoction.

      I'm just very new to making fiter coffee. I think I'm doing something wrong. I put 5 teaspoons of coffee powder and add water till half of the top container. I'm getting decoction for only one cup which is not very concentrated too. Should I add more water?

    Growing up partially in the North of India and partially abroad, whenever I was home my South Indian grandfather would make me filter coffee, as I got older and moved to Chennai for an assignment, my Ayi Elamma would make me filter coffee. For me it is hands down the perfect flavour of coffee and milk, nothing in the world comes close to it. Sadly, in all years I never once tried to make it on my own, or learn how to make it. I tried it today and it was far far away from what my ancestors drank. But thanks to your video, I can now try it out properly on my own. Thank you :)

    Nicely done! Question: instead of using already powdered coffee, get it powdered just before ready to add to the filter to retain flavor....secondly, blended coffee with chicory will enhance the flavor...a must for south Indian coffee...small tip.. I tried it with adding small amount of half-and-half to make the milk even thicker and it came out really good!

      Hey James, I'm a south Indian and filter coffee aficionado. I've tried grinding my own beans but nothing comes close to using a quality brand from the Indian store like Cothas or Narasu's. The quality of the coffee and grind size are critical to the decoction. As far as half and half goes it is generally not done in India. The secret to a creamy coffee is full fat milk boiled an extra 5-7 mins which removes water and provides that richness! good comment.

    I was visiting India in 2012 and traveled the whole west cost from Srinagar to Kanyakumari. My most cherished memory from this journey is the great south indian coffee. Wether be it at the Indian Coffee House with some nice omelette or at sunrise in freezing Ooty, waiting for the bus... Great Video :)

    All is fine sister.... but the key thing is that you can't pour water just like that in the top of the pressing disc...and you must pour little bit and soak the powder with the hot water for at-least a minute...make sure the water shouldn't drip down at this time to the below chamber....then pour the hot water same as how u do in the upper chamber and get that coffee essence...that should be the perfect way of getting it otherwise what u get is not really an 100% rich aroma one...it will be a dilute and you will be missing the complete taste and aroma. Hope u received what i mean. Thanks.

    I love making coffee from other countries, I have made Turkish coffee and own an Ibrick, I have a couple of Phin filters for making Vietnamese coffee and just today bought an Indian filter coffee set, for all those wondering, I found one online at amazon but then found out that World Market Cost Plus sold them also, that's where I purchased mine. Now that I have a good grasp on how to make it, Thank you to all the lovely ladies here on youtube, I feel confident and cant wait!

    Thanks for the video. I used to buy coffee at an Indian market but I didn't know how to prepare it correctly. I used to just use a French press and serve it without milk and sugar. Let's say it was on the strong side. Now, I know how wrong I was!

    Pefect. But I add most of the required decoction while making the coffee and prefer topping the final coffee cup with a tsp of decoction. That gives that extra flavour.
    But as ma'am said, GOOD milk is "THE" crucial ingredient for GOOD coffee.

      I would add decoction to hot milk, there by I can control strength of coffee I like, based on the shade. If you add milk to fixed amount of decoction, you may end up with less or more coffee (final) than u wanted. It is simple Science :)

      @@mugdharane9120 this is espresso shot. But the coffee used is not 100% pure Arebica. A lots of chikoree is mixed in it which gives it the special flavor. Try using 100% pure coffee

    I feel I always mess up with the quantity of water that I add to make the decoction. Can you please mention the quantity of water that you added for 2 cups??       i too just bought this coffee maker and also bought a filter coffee pack. will make this coffee right after this tutorial. funny thing is once we got a 2 kg filter coffee pack as gift from south india and me being the major coffee drinker in the family prepared it the way instant coffee is prepared and it obviously didn't taste good and later i threw away the whole packet thinking the coffee might have got spoiled because filter coffee looks different from instant coffee. lol.

    Filter coffee is really stronger, tastier and more refreshing than instant coffee. It's because of the procedure of coffee making. We practically use coffee bean extract to make coffee that gives us so rich drink. Nice video.

    I just made it! While the taste was amazing, a lot of ground coffee also came out of the filter. Next time I will try a different coffee maker. But hey, thank you for that stimulating cup of filter coffee.

    Hema after adding the coffee powder it is preferred to press the powder hard (the powder must be ground to fine so the percolation is thick). Add boiling water to 3/4 of the umbrella that you have put over the powder.

    Hi Hema, I bought my 1st set of the very same filter and the typical south indian glasses n bowls from Pondicherry, many thanks for ur recipe...just wanted to know how long are we supposed to wait for the decoction to happen? Also are we supposed to discard the remaining coffee in the upper chamber or we can use that too for the coffee?

      You can try the coffee powder from a local coffee shop where they break the coffee beans into coffee powder.
      For 500 gms you can ask for the following combination
      100 gms chikory
      200 gms plantation
      200 gms chicory
