Homemade Bulk Sausage (and Italian sausage)

  • Bulk Pork Sausage
    2 tsp to 1 Tablespoon ground sage
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon dried marjoram
    1/8 teaspoon cayenne pepper
    a pinch of red chili flakes
    (about 1 teaspoon water)
    1 pound ground pork
    For Italian Sausage, add 2 tsp paprika and 1/2 tsp fennel seed and mix well.
    In a mixing bowl combine the ingredients in the order listed, stirring well to mix following adding the water. Once all the ingredients are mixed well and the ingredients are distributed well throughout, you can pat these into individual patties and freeze on pieces of parchment paper, cook right away, or store in the fridge until ready to use. Keep in mind it IS fresh meat and should be used soon. Enjoy!

    Thanks for the recipe! Was searching high and low for clean breakfast sausage without breaking my grocery budget. Have been slowly removing highly processed foods from my family’s diet. I always had stomach issues eating breakfast sausage but now I’m thinking it was MSG all along 😅

I think this will be exactly what you’ve been searching for AND the bonus of the fact that there’s such minimal waste (because the marketable sausage in stores has SO much fat incorporated into them, which equals higher profit margin).
