  • As a child in Jamaica, Byron always associated home with warmth, starting each day with a walk under the inviting sun. Once, as he tumbled off a horse at a neighbour's farm, his face flushed with embarrassment, but his grandmother urged him to laugh, rise, and try anew, a heartfelt show of support that would be his life’s lesson in resilience and the art of finding joy in challenges.
When Byron moved with his mother to New York City in search of a new life, the frosty embrace of a Northeast winter jolted him. He longed for the cosiness of his grandmother's kitchen, where culinary love wafted through the air. But, armed with her wisdom, he found pleasure playing in the snow, and warmth began to emerge, even in icy layers.
Within the city's expanse, he discovered a different kind of community, and many culinary loves. Strolling through Little Italy and its brisk aroma of espresso, or Chinatown where the steam of hot tea hits the cold air with panache, each district a pocket of cultural activity, a heartbeat of diversity.
Byron describes The Peninsula New York as his special place, where colleagues transformed into confidants, and guests turned into friends. Today, Byron creates a warm atmosphere for every guest he meets, in the city he now calls home.
