Idk if yall have tried koolaid chicken, but I’ve caught some slammers with thigh meat and cherry koolaid, stays on the hook better then liver, and doesn’t get snatched by panfish like worms. Best bait is life fish, I always bring a creek rod and a rooster tail, catch a small fish, then hook it up and catch a water heifer
Depends on what you're after. For large blue cat, cut shad. For large flathead, live perch. For smaller channel cats and smaller blues, catfish charlie blood bait "B" , the company out if Iowa, is the best I have found in the last 50 years, though there are some days that local punch baits seem to work better than anything here in North Texas. For small channels and small blues, its best to sour maize for three weeks in a bucket of water in the sunshine and sink it weighted in a burlap bag in 4 to 8 ft of water near a gentle current. Make sure the catfish cannot get into the burlap bag, knot tie the top a couple of times then cut a piece of trotline and cinch the bag tightly right below your knot ties so the bag stays closed . Old bricks or big rocks or cinderblocks can weight down your burlap bag. Sink the bag with a five gallon 🪣 bucket's worth of the soured rotting milo in it, wait 48 hours, and come back ready to catch fish. I like to use this technique for lazy fishing at night with my pontoon boat. You can bring several folks. The lighted bobbers with bait just off the bottom thrills the small kids, though I usually fish tight lining with my bait inches off the bottom using a slip cork and small bullett weight.
Chicken hearts are my favorite the have lots of blood and smell. Every time I youse them within 2 to 3 casts you catch a nice catfish you should try it!

In fact this weekend, July 26-29 is our annual Catfishing tournament in East Grand Forks, MN with some big prizes. Folks all over the nation come and fish.
It depends more on of where you are and what you want like use live bait to catch more flathead and big catfish in the summer in the fall use cut bait if u want smaller ones use worms and other things like hotdogs and stuff

For people talking about chicken livers don't stay on the hook, learn how to tie a loop knot.. When you put the livers on the hook, pull the loop from the eyelet, put part of the liver in the loop, pull the loop close and voila

Went bass fishing at a pond with live minnows. Caught a 7lb cat with a live minnow. I didn’t even know the pond had cats.

In Lake Erie, it seems like they switch what they want. Shrimp, worm , crawdads, but the one thing that never fails is cut bait.

Get the livers that haven't been frozen. They're found on trays rather than tubs. Non frozen stay on the hook better. They cast out further.

I like to use raw shrimp, I let it sit in the freezer for about a week and then the smell attracts big cats. I caught a 18 pound cat with raw shrimp.

From what I’ve read catfish can’t see real well anyway and mainly use scent to find food. So probably the smellier the better!
