LEMON LOAF RECIPE Ingredients: 1.5 cups AP flour 1tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 cup granulated sugar Zest of 2 large lemons about 2 tbsp plus more for garnish 3 large eggs 1/2 stick butter slightly melted. (1 oz) 1/4 cup vegetable oil 1 tsp vanilla extract 1 tsp Lemon extract (pure) Juice of 2 lemons 1/2 cup Buttermilk 1. Combine all the dry ingredients except sugar, set aside. 2. In a large bowl combine the sugar and lemon zest. Whisk until incorporated. 3. Add the eggs and whisk until light and fluffy. 4. Add the butter, oil, lemkn juice and flavorings. Whisk away. 5. Add the Buttermilk then the dry ingredients. 6. Pour the batter into a prepared loaf pan, bake at 350°F for about 30 minutes. 7. Let it cool to room temp before icing. For the icing: 1 cup confectioners sugar 2-3 tbsp lemon juice 1tsp lemon zest Whisk until combined. Pour over Loaf. Enjoy!
