You need to realize that even in professional, even in national teams, serving is something that does get messed up a lot. It's not because they cannot serve and just get one over, it's because they go for all or nothing. Serving specialists always attempt to aim in a specific spot or control the spin of the ball or control the power of their serve. Serving alone is a huge part of game strategy and it can counter the opposing team's system in many ways by serving them off system. These mess ups by servers happen because they try their best to make it count in a very specific way according to how the game is playing out. They don't happen when they try to just get the ball safely over the net with a simple and weak serve that anybody can do in their age and level, and in turn anybody can very consistently receive from the opposing team. Their position and their play time revolves around a very specific skill that is way more valuable than a basic low level serve, and because they're not machines, many times it will fail to be successful.
I know it's an old video but, I had to mention this serve using the celling is actually called "serve journey in the stars"' because it goes really high, it was created by the brazilian player Bernard in the 80s. the English subs did not translate as that but it is a known move for brazilian voleyball fans, the subs in portuguese actually have translated as "journey in the stars".

That serve into the ceiling is called a "skyball" basically you hit it as far on the bottom to make the ball go as high as possible. They are SUPER fast coming down because of gravity and because of the height its hard to predict where its going to be, it makes it really hard for deciding to receive overhand or receiving underhand. they are also surprisingly hard to pull off.
Sniping someone in the back of the head with an underhand serve is something almost every player can relate to when first leaning. I did it to my best friend in one of our first games and then in practice I hit my coach in the head too.
Underhand serves are not used in professional plays, they're like oldschool and amateur starter serves, the control and precision is absent, and the power is lacking. It has no technical advantage over jump and float serves. but even a useless serve coupled with favorable conditions (high ceiling, flashing lights) can turn advantageous. I love that.

What Daichi did is actually a legitimate volleyball move. It's often used by players that want to feint a spike, or someone that can't spike well
the under hand serve is the simpilest serve especially for a novice in volleyball but thoes other serves are hard to do
