In the North East of India we eat a lot of this. We often steam them and this is often a staple in diabetic menu in households. Lovely surprise to know of its presence in other parts of the country.

very interesting ! It also makes a very nice drink with lime, ginger, sugar or honey. The chocho as called in my country Jamaica can also be shredded & steep like cabbage for 1 minute.

I know a very delicious way to cook this. Slice them in half as she did, then start from the top and make thin slices all the way down, about as thin as you would a cucumber for salad. Two would make a large meal.
    Here's the recipe
    1or 2 Chayote Squash (Sliced)
2 Green Onion (chopped into 2in pieces)
2 Clove of Garlic ( Crushed)
1-8oz or 16oz sirloin, Depending on your desired amount of meat.(thin slices)
3 tbsp soy sauce (5 tbsp. if using 16oz of meat)
1tbls sugar (2 tbsp if using 16oz of meat.
    Salt and pepper to taste
Rice for serving with the dish.
    2 tbsp of olive oil
Directions: In a hot pan add your oil. When the oil is hot, turn to medium heat.
Stir in the garlic, sugar, soy sauce and let cook until the sauce starts to bubble and becomes a little thick, being careful not to let the soy sauce and sugar burn.
Add meat and toss the meat in the mixture until meat is coated and is a medium well.
Toss in the Squash and Green Onion and cook until the Squash is slightly tender. Add salt and pepper to taste. Serve rice on the side.
Side note. During cooking, you may taste the squash, as the beef will have lots of flavors already, to see if you want more flavor in your dish. If so, Only add soy sauce,1tbls at a time.
You can use any protein you like and the same amount of ingredients are used.
Good Luck, I do hope you like it.

Ah, Chow-Chow is Chayote,.....and there are very different kinds of chayote, there's a li'l small, white chayote, here they're know as criollos and then there's a dark green colored one with lots of sharp spines, you basically need to handle it with tongs so as not to get poked but they're all very good. Besides using in soup or dishes, my grandmother would simply cook them with tequisquite(an herb that helps your digestion), once cooked, cut in half and served, drizzled with honey. Thumbs up, thank you for sharing and jari naraski(greetings in purembe)from Mexico! :)

In Louisiana it is called a Mirliton as well more than likely from the French Acadian . There is a annual festival in the city of Jeanerette for it. It is used sort of as a filler vegetable in many recipes. It takes on the taste of what it is cooked with. Popular in a side dish or dressing. It is very mild and tasteless on its own.
