Lots of saltyness already in the Extra Sharp Cheddar and Tuna, so I personally wouldn't add any salt. I'd use less mayo or maybe none at all in a melt since the melted grated cheese can bind it together. Thanks for the tip on letting it rest!

Keep both sides of the grilled bread nice and cruchy: don't let the bottom touch the plate! You can lay 2 chopsticks across the plate or a dinner knife then place the sandwich on top.

Tuna is great in general, a lot of protein, relatively cheap, very versatile, i like the oil one better for flavor.
