  • Crust:
    • Incredible Pumpkin Pie
    Filling:
    18 oz fresh blueberries, washed/dried
    1/2 cup granulated sugar
    1/4 cup light brown sugar
    1/4 cup all-purpose flour
    1 Tbsp cornstarch
    1/4 tsp salt
    2 eggs
    2 egg yolks
    1 tsp vanilla extract
    2 tsp lemon juice
    1/3 cup heavy cream
    Blueberry Puree:
    18 oz fresh blueberries, washed
    3 Tbsp granulated sugar
    1 Tbsp cornstarch
    1 Tbsp lemon juice
    1/2 cup water

    That is unfortunate about the puree pie though! The idea of a purple custard pie just hits those whimsical parts of my brain just right! Do you think using cream cheese, and making it more like a cheese cake, would help realize the purple custard pie?

      I feel that cream cheese would actually work for that! The cheesecake texture would combine with the puree beautifully. I think one of the problems I had with the first pie was too much puree. Maybe if I used a half cup less,it would've been better. Really love the cheesecake idea!

      @@happytree920lol you'll have to try it some time, and, if I may make a request, homemade whipped cream of a bright and equally whimsical color to the purple! Yellow, or green, and red!

    Pr made crust how long do u bake

      The first bake is at 375 degrees F for 25 minutes. Make sure you use parchment and something to weigh it down, like Garbanzo beans. Then take out the parchment and beans and bake for another 15 minutes. When you bake the pie, remember to lower the temperature to 350 degrees F.
