Hi there! I preheat it just until the oven reaches the set temperature and it beeps. I know it could be preheated longer, but I find it unnecessary. As for the fan, my oven is fan assisted and I use it almost all the time. I tried baking without the fan at the same temperatures and the result was almost identical. Without the fan, you just need to keep the bread in the oven for 2-3 more minutes for it to turn golden.
I used to let them rest, but I noticed that they stretch well even without this. You can let them "relax" for 5-10 minutes if you want, they will stretch even better after that.
What are the benefits of adding the rolled oats to the dough? Does it add to the flavor? Curious as I bought rolled oats and my family doesn’t really eat them so need to do something with them. And hello from Bosnia 🇧🇦
That's a great question! The ones on the crust get really crispy and have a toasted aroma that adds a great nutty flavor. The surprising part is the oats inside. First of all, the bread comes out really soft on the inside. I would have expected it to be chewier, but it's softer! Apparently the oats retain moisture better, which makes the crumb stay soft. The other benefit is that the bread stays soft longer, probably due to the same principle. The flavor is also great, there's a subtle complexity to it that's hard to explain, but I love it! Then of course it adds the fiber, oats are quite nutritious, so that's a big plus.

You could watch the whole thing, make the bread and find yourself with a brick. I do it when the bread is completely cooled, though, if it's still hot it'll turn into a pancake 😁. Why do bakers squeeze the freshly made bread? For sure, sourdough bread will stick together as it usually has a wet interior.
