      Haha, it naturally increases glutamate during aging, which has the tasty beefy flavor, similar to monosodium glutamate (MSG) 😊

    This is not Dry-aging, its wet aging.

      Wet aging is vacuum sealed for the whole process. This is a combination of dry aging and wet aging, you’d be able to continue to wax age well past 90 days, where as with wet aging you start to get spoilage around 30 days typically due to the amount of moisture in the bag. Hope that helps! 😊
