If you want to get fat when you buy meat you buy brisket. Nobody wants to pay 30-50 a pound and get a bunch of fat. Nobody’s saying it’s not good. They just make it into tallow because you aren’t looking to buy fat when buying steaks as they are expensive
@@Michael-vm8kj the meat price is based on the popularity of the meat. People don’t really like the organs hence they are much cheaper. You should be happy about that if you like buying organs

Commands more money. The flavour on a rib is as tasty off the bone as on bone.there is no marrow in a rib bone .
It just looks nice and impressive. It also added a few extra dollars per pound for the butcher too lol.
