  • Hi friends, I’m so happy you’re here. In this video, we explore our local farmers market and do our weekly grocery shopping. I also bake a peach crisp and make a delicious steak dinner. Thank you for being here and hope you enjoy this weeks video and try out some of the recipes I share!

    Coconut Whipped Cream
    1 15 oz can of Coconut Cream, chilled
    2 tablespoons maple syrup
    1 teaspoon vanilla
    Directions
    1. Chill your canned coconut the night before using.
    2. Add your chilled coconut cream to a bowl or food processor. NOTE - there may be some access liquid in the can. Set aside access liquid and only add the solidifies parts of coconut milk.
    3. Mix the coconut cream on high for 30 seconds in food processor or using a hand mixer.
    4. Add in your maple syrup and vanilla extract.
    5. Mix on high for another 30 seconds.
    6. Chill. for at least 30 minutes before serving.
    Chimichurri Sauce
    1/4 cup parsley
    1/4 cup cilantro
    1/2 small onion
    4 tbsp of olive oil
    1 tbsp of minced garlic
    1 tsp red pepper flakes
    1/2 tsp salt
    1/4 tsp black pepper
    Directions
    1. Add in all your ingredients to a food processor.
    2. Blend on high till herbs and onion are finely chopped.
    3. Serve and enjoy.
    Roasted Rosemary Potatoes
    3 lb of gold yunkon potatoes
    1 tsp salt
    2 tsp fresh or dried rosemary
    1/2 teaspoon pepper
    2 tbsp avocado oil
    Directions
    1. Preheat oven to 400 degrees fahrenheit.
    2. Dice your potatoes in one inch cubes.
    3. Add to large bowl.
    4. Mix in your salt, pepper, garlic powder, rosemary and avocado oil to potatoes. Stir to combine till potatoes are evenly coated.
    5. Add potatoes to a parchment paper lined baking sheet.
    6. Roast for 45 minutes or until golden brown.
    Sautéed Green Beans
    1 lb of green beans
    1 tablespoon of avocado oil
    1 tablespoon minced garlic
    Salt and pepper to taste
    Directions
    1. Wash green beans. Trim ends.
    2. In a medium pan, preheat pan to medium heat. Drizzle pan with avocado oil.
    3. Add minced garlic to pan and cook for 2 minutes.
    4. Add green beans to pan. Add salt and pepper.
    5. Cover green beans with lid.
    6. Check on green beans regularly and stir occasionally.
    7. Cook to desired texture.
    8. Serve and enjoy!
