How to make Rezz Blahem (Rice with meat)

  • Rezz blahem is one of the most popular and delicious traditional dishes in Mediterranean cuisine, and is a hearty favorite in such restaurants around the globe. Old or young, everyone loves it! No wonder a playful “Ehem ehem, Rezz blahem” is ever alive as mothers still say it while spoon-feeding it to their children :). My mom’s still echoes in my mind every time I make this dish!
    Traditionally, Rezz blahem is made with short-grain Egyptian rice. However, when it comes to starchy grains in general including rice, it is important we make a cautious and informed choice because of their effect on blood sugar. That’s why I prefer long-grain rice (like Basmati rice) which has a significantly lower glycemic load than short-grain rice. Another advantage is having a fluffier version of the dish ;)
    There is more than one way to eating Rezz blahem: (1) as a main dish with, or without chicken added, with salad, yogurt or chicken soup (2) along with stews - I am thinking of Mloukhieh/Molokhia in particular. All sorts of garnish can be added: roasted pine nuts and/or roasted slivered almonds, cashews, pistachios. For those who like a sweet-and-salty taste, raisins add a lovely taste whether slightly sautéed or plain. Find the detail recipe towards the end.

    Why do you use 1 cup parboiled rice? I did make this and it turned out delicious! I just washed all 3 cups of rice together and soaked it for over 20 minutes.

    Hi Lina, thank you so much for the most useful videos that you make..I was wondering if we can make this dish with maggi chicken cubes? And would that be a less fatty option? Thanks a lot!

      Thank you! Yes you can use condensed broth cubes but then watch the salt. I’m not sure about whether their fat content is less or not. I usually make the chicken broth from scratch (see related video) so if I want to remove/reduce the fat, I simply skim it after the broth has cooled.

    Some Arabic friends--from Jerusalem--use the word snober to refer to nuts that look very much like pine nuts. Are these the same nuts? Or are they slightly different? Thank you.

      3 cups of chicken broth. 1 cup for each cup of rice. Only water to wash and soak the rice.

    Cooking Time for Basmati and parboiled is different

      Sybil Baran Not when you soak the basmati rice until its colour turns bright white. Once you do, cooking time for both types of rice becomes the same. Try it!

    The basmati rice cooks much faster than the parboiled rice.

      @@macklee6837 Maybe there is a difference in other countries? I don't know. Where I come from it is the same. Sunflower is a vegetable Oil. Like Oliveoil etc.
