For the budget minded here's a recomendation for the list - Superteam's Classic Gravel G31-38. Weight in the mid 1400s (can't remember exactly), 700c, 31mm outer, 24mm inner, 38mm deep. Blade spoke as standard. HG or XDR, CL or 6 bolt, TA or QR. Also included are a QC checklist card for each wheel signed by the wheelbuilder/s and a manual (never seen that before). All for a tad more than $1000 usd but currently on sale (Jan 4 2024) for 450 usd. All in all a bloody solid gravel wheelset. You'd kick yaself if ya missed out 😉

I Think there are lots of gravel wheels, your list looks a little short. I own 353 nsw - but thinking to put 240 hubs in there - I think it could be a dream gravel wheel than.
How do you mean gravel bike wheels share the same diameter as mountain bike wheels? Those come in 26, 27.5 and nowadays mostly in 29 inches. Not in 28 (?)

29er wheels are just a bigger tire on a wider 28" rim.
