Vegan pie with apricots on crispy dough. I decided to make it with green buckwheat flour and millet flour, so this apricot pie is gluten free. There are no eggs and milk in the dough, it is on applesauce. Such a vegan pie is obtained with a crispy, tender crust on the bottom and a juicy apricot filling on top. Delicious, simple and fast. You can experiment with flour.

Ingredients for Vegan Apricot Pie
Pie with a diameter of 20 cm, weighing about 700 g
Vegan Gluten Free Dough:
100 g applesauce
30 g vegetable oil
1 tsp sugar
a pinch of salt
80 g green buckwheat flour
80 g millet flour
0.5 tsp baking powder
Filling:
400 g pitted apricots
1 tbsp coconut/almond flour (optional)
2 tbsp brown sugar (any sweetener)
