Sir I am a bong & let me tell u the main secret of Bengali cuisine is the use of minimum spices. Sir understand we eat non veg atleast 2 times a day so if it's spicy we will not be able to consume it often. Hence our food is made tasty but the use of spices is very basic & minimal. Now the Kolkata roll - Firstly in Kolkata we do not use schezwan sauce or chutney in anything. Secondly the paratha is always a laccha paratha. Thirdly the paratha is first fried then the egg is broken on the paratha & mixed with salt. Once it's done then onion, cucumber & green chillies are added. Also in sauces tomato, chill & kasundi (Bengali rye sauce) is added. A bit of lemon is squeezed & chat masala added to complete it. Try it sometime

It's not Kolkata style egg roll It's basically bhopal style egg roll where the owner is from Kolkata.......you can say this.....but it's not authentic bangali style egg roll.....In authentic Bengali egg roll we use a simple chapati using maida/atta and one/two(as per demand) normal egg after adding both of this we add tomato catch up,chopped onion,cucumber and somewhere thodasa chat Masala that's it
