Not trying to go back and forth with you about this but you are talking biryani 101 with a guy who wanted to be a biryani chef and instead became an engineer because his parents wanted it that way.
I made this biriani the same way as you did except for the saffron (coz I'm not fancy that way 😀) and it turned out really good. The onion frying trick was on point. Thanks dude for a fantastic recipe! 😘
Yup yup, just follow this recipe, the chicken will cook. It's called dum, that's when you close the lid real tight and don't let any steam escape, it'll cook in its own juices😋😋

There's a (probably unnecessary) method that is hard to nail, the one where you layer spiced rice on top of plain one, over and over. But simple Biryani isn't that hard to make, if you have the right guidance

I HAVE SEEN HUNDREDS of people around the world try to make a classic indian/pakistani biryani but they all fail (as long as i have seen) but goldenbalance KILLED it that looks f ing awesome and EID MUBARAK
This is a very good recipe. One small technical correction which kinda adds to the difficulty of the dish. Do not let your rice cool down. Everything thing should be piping hot at the dum stage. Hot rice will absorb more favour and it will elevate your biriyani to the next level.

This is actually a type of biryani called 'Kachay gosht ki biryani' which translates to: the biryani of raw meat. The reason is that he layers the uncooked marinated chicken with half cooked rice instead of cooking the rice and chicken separately and then combining the two (which is the more common way of making it). I believe this is a hyedrabadi style of biryani; still traditional and therefore valid and in my opinion, the meat tastes even better this way - so tender and juicy 🤤 The only thing I noticed is that he used skinned chicken whereas we usually use skinless, but this seems worth a try
