  • Betty demonstrates how to make Game Day Nachos. These were made for this year's Super Bowl parties, but they are great for any party or snack.
    Game Day Nachos
    1 pound ground beef (I used 85% lean ground round.)
    1 teaspoon salt
    1/2 medium to large onion, finely chopped
    2 cloves garlic, finely chopped
    1 tablespoon homemade Taco Seasoning (There is a video for Taco Seasoning in Betty's Kitchen, or you may use 1 package taco seasoning from your grocery store.)
    16-ounce can refried beans
    10-ounce can Ro-tel diced tomatoes with lime juice and cilantro, drained, reserving juice (You may use any flavor of Ro-tel diced tomatoes.)
    corn tortilla chips, as needed
    finely-shredded Cheddar cheese, as needed
    sour cream for garnish
    pickled jalapeno peppers for garnish
    In a large, deep skillet, add 1 teaspoon salt to 1 pound ground beef. Brown over medium heat, stirring constantly. Add 1/2 chopped onion and 2 cloves chopped garlic. Cook until onion and garlic are softened and clear. Add 1 tablespoon Betty's Taco Seasoning and continue to cook ground beef mixture, until flavors are well combined. Drain off all fat and set aside. In a medium-sized pot, place a 16-ounce can refried beans and a 10-ounce can Ro-tel diced tomatoes that has been drained, reserving tomato juice. Heat over low heat, stirring occasionally. When hot, check to see if the consistency of the refried bean and tomato mixture is too stiff for spreading. If it is, add an appropriate amount of reserved tomato juice and heat for a minute or so. Combine the refried bean/tomato mixture with the ground beef mixture. Now, assemble your nachos: On a corn tortilla chip put a rounded teaspoonful of nacho mixture. Sprinkle well with shredded Cheddar cheese. Place in an ungreased 13-inch by 9-inch by 2-inch Pyrex baking dish. (Expect about 15 round nachos per baking dish.) Bake at 350 degrees (F) until the cheese melts, about 10 minutes. You may leave them longer, if you like the cheese browned and crusty. Remove from oven and place on a nice serving dish. Continue this process until all nachos are made. Serve warm. This recipe will make about 50 to 60 nachos of a standard size.
