本当に凄いですね。私は自分でもよくパンを焼くので、工程の目まぐるしさと種類の多さに、ひっくり返りそうです。パン屋さんの朝は早いとよく聞きますが、本気じゃあないと続かないですよね。見出したら止まりませんでした。ありがとうございます。

私は趣味でパン作りしてますが、4〜5時間かけて、一種類を10個くらい手作りするのが、精一杯です。
種類の多さ、数の多さ、仕上がりの美しいこと、頭が下がります。

学生の頃、早朝バイトAM4:００～７：００迄パン屋さんでアルバイトをしていました。揚げ物、サラダ、卵剥き、サンドウィッチ用のからしマヨネーズ作り、卵ディップ、本当に目まぐるしくあっという間の三時間のバイトでしたが今でもいい経験だったと思っています。柔らかいパン生地に触る事はありませんでしたが今は食べる分だけ時々パンを焼いています。素敵な動画をありがとうございました。あの頃の思い出が蘇りました。素晴らしい職人さんですね。下準備迄プロフェッショナル。常に次の朝の想定・・。京都に出掛けた際には寄ってみようと思いました。

The variety of bread, pastries and sandwiches is mind-boggling, especially for a small bakery of one main baker and 3 helpers (by my count)! Everything looks delicious, from the fruit-topped Danish to the chicken sandwich (350 Yen, less than 3 USD with current exchange rate). I would have a hard time finding some similar-looking chicken sandwich here for less than 3 times that price! One thing that stays in my mind from previous trips to Japan is the uniformly high quality of food, even in small shops in small locales. Respect to the Japanese workers and their always-striving-for-best-quality ethics!

What a wonderful little bakery. The sheer variety being offered is amazing. Everything created to perfection with skill and precision by mainly one master baker with help from his team. This little bakery would easily be the best bakery in my area -- even surpassing larger chain bakeries here that have 2x-3x more staff. To see all the offerings neatly and cutely displayed brings much joy and happiness! A truly inspiring example of dedication and passion towards one's craft. The master baker has been working non-stop since 3am to well past the 9am opening time, not only baking for today, but preparing dough for the next day. It is exhausting to think this routine is done each and every day - truly a labor of love. Much respect. 🙏🏻 I hope to be able to visit this bakery one day.

Трудолюбие японцев всему миру известно! Но в данном случае действия пекаря доведены до автоматизма. Много смотрю о Японии, но нигде не видела такую роскошную и разнообразную выпечку. Уважегие огромное исполнителям! Жаль, что не указаны начинки, а ведь их великое множество, на любой вкус. Чистота, опрятность, автоматизация ряда процессов, приготовление слоёного теста, формовка изделий, даже некоторые движения по "загрузке" начинки и итоговому оформлению - всё очень впечатлило и понравилось! Искренне рада за клиентуру этой пекарни! А труженикам- процветания и достатка, но самое главное - здоровья!

I've been to most of Japan. I've traveled alone, with friends, for work, and with family. Traveled on a shoestring budget and also 5-star travel.
One thing that struck me the most about the Japanese is that they want everything, especially food, to look good and taste great, and the packaging is the best in the world.
