On a standard gauge machine, I find I get very flat edges by casting on with a cast-on rag or waste yarn and ravel cord, hang up the live stitches and knit one row with the longest stitch length. Once the piece is finished and the ravel cord removed, the long stitches (which have to go around two loops each) do not stand out and the seam is flat. Your method, however, is very much faster, but I would be afraid to snag those loops on the inside on my wrist watch or some such thing, or that an older baby would start picking at them when bored. 😂
Hang that edge on needles. Knit the hem. Pick up original edge stitches, bind off together. There are other ways to do it, but i don't have the video up yet.
