I still think it's better to have the thermostat replaced, it's not expensive and for the engine it's better to run at the correct temperature, not only because of fuel consumption but also to prevent extensive wear.
Of course a separate diesel heater is also a good idea for when you are stationary on a campsite 😄

I have a 1988 Renault trafic camper, I find if you build some momentum before you start to incline, and open the blowers in the cab to take some heat off the engine and keep foot down in third gear until you reach the top, all is well. Steeper hills, a steady 20 mph in 2nd and don't lose your nerve

I'm definitely feeling the cold now I'm back in the UK,after six weeks just before and over the Christmas period in Tenerife with most days averaging 25 to 28 degrees, but it does go colder at night but you only need to wear a jumper and a pair of trousers to stay warm, but a friend and his girlfriend who have lived there for nearly 11 years now, but they still come back to the UK for about a week or so in the winter, because constantly having sunshine every day can become boring, but in the UK we never know what weather we will be getting the next day, neither did Michael fish some time in the 90's we're not going to get a storm this evening,he was right there because we got a bleeding hurricane instead 😂👍

Do the thermostat as your motor will last longer and love you for it, more efficient running at running temp (around 90 decrees) . Just as critical in the summer as it slows the flow of water and allows it to stay in the radiator for longer to cool.. Enjoyed your video, looks a little cold in the UK. Not the greatest here in NZ for the middle of summer, hasn't stopped raining for the last few of weeks, farmers are happy.

When I learnt to drive Buses and Coaches my Instructor always said to treat other road users as idiots, including the need they have to get past the bus. But this seems to apply to any large vehicle that a car diver can't see past and for some crazy reason and bad weather seems to draw them out lol.
I also discovered in the years I spent Bus and Coach driving, that driving with dipped headlights on actually made the vehicle visible to other road users ..... Go figure 🤷🏻‍♂️ I mean it's not as if a 32ft + long Double Decker has a cloaking device

Driving a tramper van is challenging. I know its hard but you have to ignore the traffic behind you. I've just towed a line of cars out of Dieppe today up a hill in third gear 40mph, delayed them for all of 3 mins, I'm aware but don't care.. I'm at the start of a 2500 mile round trip to Cadiz, it can be done, did last year as well. Once you get your engine sorted they are reliable vans. If you do change your thermostat beware that the replacement part may not have whats called a jiggle valve (yes it really is called that). As I found with mine its almost impossible to bleed the system without one. Good luck.
