    This Parsi dish is basically a rustic, one-pot lamb stew cooked with lentils, vegetables, tamarind and spices (the 'dhan' means grain or lentils and the 'sak' is to stew). And it’s smashing.
    It’s typically eaten with the whole family as a weekend meal and you can see why. It has a tang from the tamarind, heat from the chillies and sweetness from the vegetables that all come together creating a pretty special balance of flavours. Something for everyone, really.
    Ingredients
    500g leg of lamb, trimmed and cut into chunks
    Lentil and vegetable mixture
    60g toor dhal split
    60g masoor dhal split
    60g urid dhal split
    1 small aubergine, chopped into large chunks
    ½ small pumpkin, chopped into large chunks (you could also use butternut squash or sweet potato)
    1 medium onion, roughly chopped
    15 fresh mint leaves, chopped
    Dry Spices
    1 tsp cumin seeds
    1 tsp coriander seeds
    4cm stick cassia bark
    4 green cardamoms
    4 whole black peppercorns
    1 tbsp dry fenugreek leaves
    Wet Paste
    6 cloves garlic
    3cm piece of ginger
    2 chillies
    Masala
    2 tbsp oil
    2 medium onions, diced
    3 tomatoes, diced
    1 tsp salt
    1 tsp turmeric powder
    1 tbsp tamarind paste
    Handful of coriander, chopped
    Method
    Put all the lentils, vegetables and mint into a pan with 1L of water and some salt, bring to the boil and leave to simmer for 20 minutes until cooked through.
    Heat the oil and start to fry the onions until they are golden brown (approx. 20 minutes).
    Meanwhile, place all the dry spices into a spice grinder and blend to a fine powder
    Place this powder into a blender with the garlic, ginger and chillies and grind to make an aromatic paste.
    Once the onions are browned add the spice paste along with the turmeric and fry until fragrant.
    Add the tomatoes and tamarind then stir for five minutes to create a thick masala.
    Stir in the lamb to coat then after five minutes add the cooked lentils and simmer on a low heat for about 30-40 minutes. Make sure you stir occasionally as this can catch the bottom of the pan.
    Once the meat is tender check the seasoning and adjust if required.
    Throw in the fresh coriander to serve.

    I tried lamb dhansak for the first time in Edinburgh from a local delivery place called the Slumdog. We loved it so much with all the curry leaves smell and all.
    When I attempted to cook dhansak for the first time, I went with this recipe step by step and the result was AMAZINGGGG....
    the taste the consistency the smell was perfect and I have been using this recipe ever since ... I have made it like 10 times now.. abc each time I get the same comments about how good it tastes...
    The only difference is I used only daal without the vegs.

    Parsi here.
    For a quick short cut to this recipe, I will share a secret from my aunt who has been making it this way for decades when it was hard to find all 3 types of split lentils in the US grocery stores. Instead of the lentils, add a can of condensed split pea soup and a cup of water. This will give the same flavor and consistency as the daal. I know it sounds odd but I had to try it to believe it myself and how have been making it in this fashion for over 25yrs.
    This is a dish that needs to be made with lots of mutton to get that authentic dhansak flavor. Add a touch of fenugreek leaves at the end if you have it.
    Pair with rice sauteed in cinnamon and caramelized sugar (we call it brown rice but it is brown due to the white rice being coated in caramel). Squeeze a healthy dose of lemon.

    Just subscribed. Great presentation, great food! Your beauty is distracting at times, if that sort of compliment suits you. If not please disregard. Going shopping for some of the ingredients in your cooking tat are lacking in my kitchen! I think I may be all set for samosa experiments before I go! Thanks for sharing your knowledge and skills. V

    Hi Hari just made your lamb dhansak it tastes amazing only one concern in your video you say one tsp of tamarind paste but in your recipe it says one tbsp. Can you clarify is it tsp or tbsp.

    a quick quick question Hari instead of mint leaves and Im gonna strive to get them sometimes the huge supermarket near me (lakeside essex) doesn't have it seriously can I then use mint sauce ?

      I would miss them out or if you can get dried mint use that. It adds hue of freshness but mint sauce will be too stark and strong with the vinegar in it. Hope that helps

      Thanks for your quick response im going to do my best to find mint then lolol also have that TRS brand tamarind paste it says concentrated on it do I cut back on that as it’s concentrated? It don’t say on jar anywhere the quantity to use !

      @@Miss_Melly_D the concentrate is very harsh and very dark in colour so use sparingly

    Oh Dear - when I lived in the UK my dhansak used to taste of coconut but there was no mention of it here.
    Can I have been mistaken? It was heaven!
