  • Chequers curd. The Wild Service is my favourite UK tree and with a decent crop of chequers this year I've been proactive and collected some bletted fruits (or pomes technically) and made a curd, fruit cheese, sweetmeat and leather. They have a mincemeat type flavour, with a hint of exotic/ citrus notes plus the 'grittiness' of a pear which makes it excellent for all three.
    The ingredients are:-
    300g of sieved chequers
    A squeeze of lemon juice (to taste as Chequers have a tang)
    80g caster sugar
    3 large eggs
    50g butter (sliced
    Mix everything except the butter well and gently add to a saucepan with the warmed Chequers paste in. Mix well and cook on a medium heat in a bain marie for around 20 minutes. The mixture should thicken but don't overheat as the eggs will split. Once this stage is reached mix the butter in thoroughly which adds a shiny gloss to it. Cool, put in a sterilised jar and cover. The usual suggested life is a few days but in reality it will last a while in the fridge.
