My brother got married 2 years ago and he and his wife had their wedding catered by a father and son team with a brick oven pizza truck. They were amazing and it was some of the best pizza I've ever had. Everybody loved it. Cheers and well done Adam and Ben.
I managed the buffet at a pizza place when I was a very young adult. I love the feeling of the rush. We survived 100 of people which we had a lot more work. My idea for organising which pizzas to make next would be to have a marked serving plate for each type on the counter. That way, there's a buffer for each type, you know what to make next simply by seeing that the counter tray is empty, Ben can just grab the matching counter tray pizza whenever a buffet tray is empty, and you don't need liners as trays always get the same type of pizza. Only downside I can see is that the buffer pizzas may get cold when demand is slow---but you would notice that and slow down refilling them.
Could You make a video of making the garlic oil and also the pesto Your way? :) I loved the idea how You prepped the mozzarella. Today I did prep for my tomorrows cook and it was soooo easy to make the mozzarella cubes.

Hi. Love watching the vids. I have a party next month to cook for (just in the garden not a pro!) never thought of part cooking. Would you recommend doing this if cooking around 20 pizzas. How much does the quality decline if doing a part bake and reheat? Thanks for the vids!
For 20 people you only really need 10-15 pizza so making them fresh would be best. Make a couple and slice them into 6-8 slices. Serve them up and keep the pizza flowing.
Final dough temp is what matters for optimal fermentation. Water temp will make no difference on the texture. Use whatever flour works for your process. Check my dough process video.
After doing this for over 7 years it’s become pretty clear that most people eat on average half a pizza at events like this. It does depend on the event and timing though. For wedding evening food then generally half a pizza per person. So for an event with up to 100 guests I’ll usually bring 55-60 dough balls. Generally they will eat about 40-45 and I’ll bake and box off the rest for them. I always leave them with extra pizza for later in the night. I charge £1000 minimum for any weekend event up to 100 guests then £8 per head after that. So for up to 200 it would be just £1800. Buffet style is the way to go though.

@@Oth3rRun bake the pizza and just reheat the whole pizza in home oven the next day. It reheats very very well. Just 3-4 mins in a hot oven. You can even freeze the whole pizza for another day.

It's funny, before opening RUclips I was wondering if you could do a chicken bake in those ovens and wanted to ask you if the heat would be too high to do it in the oven setup for Pizzas, and here you are the first suggestion when I open it. Basically you probably have most of the ingredients in a pizza truck except the ranch dressing. Basically take a pizza dough, roll it out, top it with pre-cooked chicken, cooked bacon, ranch dressing, mix of cheese (provolone, mozzarella and parmesan) wrap it up into a roll, top it with a bit more cheese and then bake it. Would the internal cheese melt before the outside burnt? Big concern would be if you can do it without adjusting oven temps?

You seem like a genuine guy and good luck with the channel/business and I know your cautious about hygiene but you need to learn the proper hand washing technique used in catering. Unwashed or hands not washed properly is my absolute pet hate 14:11 You should be using the proper hand washing technique that's used in catering, drying your hands properly with a disposable towel and using the same towel to turn the tap off to prevent bacteria and cross contamination. The tap gets touched with dirty hands then turned off again with clean hands contaminating your clean hands again, along with a poor hand washing technique it was pointless even washing your hands in the first place. You don't want people getting sick or your reputation damaged.
Ive got to admit it really winds me up when I see Vegan on a menu and not gluten free.... vegans a choice and not a dietary requirement and its not even hard to prep for gluten free. Its nothing like a nut allergy where someone could have a serious reaction. It would just be a case of having gluten free bases and seperate cutters thats all. People really do need to start accommodating for food like this and stop using excuses!
It’s really not that easy in the truck. There is flour everywhere. It also needs cooking at 100c lower temp so not possible in the middle of a service. Pizza is made of gluten and best eaten that way.

Try putting a go-pro or something on your pizza peel, just for some action shots. I think it would work well, especially on your short reels.

Hey man can you use cold water with all purpose flour? And if so does it make a crispy dough?

Why do you hold the turning peel up at the top before turning the oven? Does it help reduce sticking when you slide it under?

Best off speaking with your catering lpg engineer on that one. Be guided by them. Mine was installed and signed off professionally.

Nah I still rocked the Uniqua in this mix. Fermentation time was pretty much the same. About 24 hours ish.

Generally bake it all on site. I don’t have a fridge big enough for the dough and I never freeze it.

I get ya. That was just a rinse off as not really dirty. When I need to wash hands properly they get it done proper.
