Also, even with all purpose flour, if you knead the dough a little longer (at least 6 minutes) and use a little bit more water (5 or 10 grams or so) it will be a lot more elastic and easier to work with. It will not stick, even without additional flour if you wet your hands a bit.
I love these Collabs. Such a great concept. Hopefully when the weather gets warmer in the uk you could do a Collab where both you and babatunde do some sort of Collab where you both go for a trek making and taking your food for the day perhaps you could come together and make up a menu so you're both having the same thing.
Fantastic idea, Mike's done a few great ration review videos in the woods, would be interesting to see what him and Babatunde would come up with for their own day's food.
I wonder if it would work with a sweet filling - stewed apples or pears, cinnamon and nutmeg, raisins? It would be hard to get the bread to cook before the sweet stuff burned. Oh, my Lion curry powder has arrived! That smell takes me back forty years!

I learned very early on when making onion bread to fry the onions first. The only time I put them in the dough mix raw they leeched their water during the baking process and the bread just remained doughy in the centre
I'm growing a chili pepper that has been crossed with a bell pepper this year, apparntly its still a bit spicy but can be used more like bell peppers in quantity. I'll try and remember this recipe to try them out :)
You can make a fruity bread like this as well using fruit that has been cooked like you cooked all the veg. It's more of a dessert or breakfast bread but it's sooooo good.
I make my own bread and always use the cheapest plain flour I can find. I've found that there's no difference between using that and bread flour, and I save quite a bit of money too. This looks delicious, and as I have home grown onions, peppers and tomatoes this will be even cheaper!

I'm going to try this! Instead of going spicy, I think I'll go herby and perhaps mix the herbs in with the flour and yeast. I think I'll also go a bit finer with the filling and fry in some mince. I think that would go amazingly with the bacon and lentil soup I made earlier. 😋
Cheers - yeah, making a decent loaf of bread takes a little care and skill - there's a lot that can go slightly wrong with making big chunk of bread, but making stuff where the bread is in smaller or flatter pieces is just much more forgiving - even if you mess it up, it will probably still be OK

That looks fantastic, great job. I've been getting into home made bread lately especially flatbread found a great simple one that uses just butter, milk (we use soya) and plain flour. I'm definitely going to give your one a go 👍
I'd love to try that but if splitting the dough in half to make it easier to handle, maybe fill one half with a vegetable mixture and one with strips of steak like a beef Wellington or with cheese to compliment the pepper/tomato/onion mix. I make a roasted veg mix from aubergine, courgette, onion peppers and mushrooms that is great hot or cold and i think that would work brilliantly in this. Inspiring recipe, thanks!
You are a gentleman and a scholar for including weight and volume measurements. It seems like an obvious solution to just weight your ingredients as you go along, but I never seen people doing that.
I made these the other day ("cheated" with a bread machine to knead and proof the dough) and they were really amazing! The flavour is so much nicer than the sum of the parts! Cheers

That looks incredibly tasty. I'm not good with capsaicin, the compound that causes the heat response in peppers, but I really feel as though that vegetable soup would take the edge off in a tasty and substantial way.
Can't wait to follow this recipe. I missed out on the whole cooking craze at the start of the original lockdown and want to get into making stuff from scratch.
when i work with a stickier dough, I use a cheap plaster scraper from the hardware shop (the largest one I can find) to kneed it on a wooden benchtop, its a nice way to kneed dough without having to add any more flour

If the dough is snapping back on you, you can just rest it a few minutes to let it relax a bit.
