Great show. Good editing. One of the easiest ways to make potato cakes is to form patties and coat them in frozen hash browns. Makes for a nice interwoven crispy crust that holds together well. I've even made them without adding egg or flour to the mash (cold, stiff) and they didn't fall apart.
I do the gnocchi all the time, but I only use about 1/2 to 2/3rds cups of flour. I adjust the amount of flour to compensate for the humidity of the air.
Lol that's actually exactly what happens if you add an egg to something really hot, it literally cooks it like a scrambled egg. It's common with some breads or if you are making carbonara 😂 you either have to wait until it cools or add it in very slowly over low heat, it cracks me up that it cracks you up 😂😂😂
