How to Can Corn | Raw Pack Method

  • Who loves corn? In this video I can enough corn for my family for an entire year. I like to use pint sized jars as they are a nice small size (much like a can size you'd buy at the grocery). In this recipe, I'm doing the "raw pack" method. That means I'm packing my jars with raw corn. Why cook it then can it because it will cook when canning.
    Rule of thumb #1 plan 1 pint jar for every two ears of corn.
    Rule of thumb #2 If your jars and contents are HOT, your canner should be HOT. If your jars and contents are COLD, your canner should be COLD. You want to prevent sudden temperature changes throughout canning. This will help your jars to seal better and without siphoning (loosing liquid from your jars).
    This process is EASY, it's just time consuming doing it all by yourself. So call over your friends and throw a corn canning party! How fun would that be!!

    Quick Recipe:
    Approximately 2 ears of corn per pint jar
    Pack clean jars with raw corn
    Salt each jar (OPTIONAL, I did not add salt, it's for seasoning only)
    Fill jar with hot water
    1 inch head space
    place on lids
    place rings on finger tight
    Place in the canner
    10pounds pressure at 55 min.

    Just a hint from old woman. If you like cream2d corn or fried corn do 2 cuts on the corn. The second cut does the milk. Milk is what the juice part is called.

    I’m going to raw pack from here on out, so much easier and I bet has more flavor. One trick I learned was to use a Bundt cake pan to cut the corn with an electric knife. You place the corn in the middle volcano part and all the niblets fall neatly into the pan, no mess.

    Thank God there's people like you keeping this tradition alive. I do it myself and was taught by my grandpa, how I miss that man. He kept a lot of families fed back in the 1970's when times were hard then all because he farmed and canned so much of his harvest.
    And just looking at your finished product makes you feel so good knowing there's always food close by with times being so hard now in 2023. Great video ma'am, thank you.

    I absolutely loved watching you!!! Reminded me of my childhood going with my mom to my great grandmas with my grandma and helping them can all day squash corn okra meat etc etc 🥲 I do it by myself now and it ain’t them same still fun but ain’t them same

      No I can’t take credit for raising it, I really don’t have room for corn. I’m hoping to add more gardening space in the next year or two. I got this from Mikes Produce in town.

    Do you have any trouble maintaining the 10 psi with your gas stove? Seems to me it would fluctuate a bit as you were adjusting the heat source. Thanks for the video!

    Thank you for sharing! I've yet to pressure can - have the canner, but am feeling more than a little intimidated. Watching you can on a glass top stove (I have one but am hoping for gas in the future) was very helpful! God bless you!

    Correct me if I am wrong . My 23 qt. PC says to make sure what yo I alles a divider is on bottom of it . Then you stagger the top jars on top??? 🤔 so confused now Lolo

      I used a divider between mine. Always go by your manufacturers instructions. Canners can be very different.

    I just made hominy outa lye water and dent corn and washing a whole lot tge next day taking off pericaps. Now its protien rich and dried out. Bout to make ranch flavor corn nuts. Pray it frys good. Organic too. Make tamales outa them if you boil it again and hominy.

But I love done ranch corn nuts! I like to make ranch garbanzo beans too. I air fry them and use my homemade ranch. Crispy and delicious healthy snack;) great on salads too!

    Did you keep it on high heat for the full 55 mins and maintain 10 PSI?
    Just attempted this myself for the first time and I am struggling to maintain. HELP!

      Usually in the pressure canner, once I hit 10 psi, I have to back off the heat. Slowly and continuously. I end up on low heat by the end.

    I canned 6 ½pints and 2 pints of corn today. I did everything correct Except I didn't add liquid to the jars! Have I ruined them? Can I open them and repressure cook them or will it turn to mush? Help?!

      We’ll I’ve not had that experience. However I’ve heard if folks dry canning potatoes. It seems to go well. But not sure on corn. Technically if they sealed they could be fine. I’d probably open one and see. But as they say, when in doubt throw it out. 🤷🏻‍♀️ I’m sorry I’m. It much help here. You can always can them again. But I’m also not sure what the texture will be like. For me, I’d risk that over leaving as is.

    I've read other recipes and they tell you to make sure you get all the bubbles out before pressure canning. I've noticed that in most videos people are not doing that, is that a necessary step? Thank you for the great video!

      It’s a good idea to get in the habit of. However, when you’re adding a thin liquid like water, you have less air bubbles. And it’s going to boil (basically) in the canner so those small air bubbles are gonna rise to the top. Where you get in trouble is when it’s thicker. If the bubbles don’t rise and release, you can get air captured in there and it can cause it to go bad in you. So it’s a good idea to do especially when in doubt;)

      Such poor advice. Yes! Absolutely, no matter what, always debubble. So that you can remove free floating air, then double check headspace as you will almost always add liquid after removing air pockets. Please give advice based on safe canning recommendations.

      @@littlehousebigfamily2001 you are absolutely correct. It is recommended to remove bubbles. I was speaking more from personal experience when adding water. I have never had the slightest issue. However, you are correct in that it is recommended to debubble. Thank you for your input and thanks for watching.

      Always de bubble because you will notice after de bubbling that the water will go down a bit and then you will have to top off the water to make it is at 1 inch head space..when ever liquid is involved you always de bubble

      I never add sugar to savory dishes. And rarely ever add salt. My husband doesn’t like salt.

    I canned corn and had black stuff in the lids when I opened after 6mo canned. Threw all away. Afraid it was bad

      Was likely just a reaction to the lid. Happens all the time. Long as no mold on your food and smells fine you’re fine. Mold is usually fuzzy.

    thank you! im gona use the 24oz recycled classico jars as i canned alot of sweet potatoes in them. 2 Corinthians 1:20-22 For no matter how many promises God has made, they are “Yes” in Christ.     I am relearning to can. Your channel is great info except for the proselytizing, which really turns me off. Assuming everyone believes in Christianity or should believe is bad for business and not welcoming to everyone. I’ll check back once in a while to see if you’ve stopped proselytizing so I can watch your entire video.
