Hello everyone! I hope you are all well :) Today I present to you one of my favorite eggplant recipes! Easy, quick recipe with amazing flavor. You can prepare it for lunch, dinner or appetizer. A simple dish that anyone can prepare. Eggplant made this way is a perfect solution for vegetarians. This recipe is light and without frying. Few ingredients are enough and you can prepare aubergines with feta and cherry tomatoes that make everyone crazy! Try this delicious recipe and I'm sure you will love it!

- 1 eggplant
- 7 cherry tomatoes
- 200 gr of feta cheese
- Fresh parsley
- 1 clove of garlic
- Salt, pepper, oregano
