    I do meals-on-wheels type meals for my elderly dad. He's 81 and has trouble chewing some things with his dentures. I put some of this in pretty much all of his meals for extra vegetables.

    Funny enough I cleaned out mine yesterday, some dubious looking cocktail sausages and pork pies 2 lots of very green looking cheese and a solid lump of mayonnaise. Yours looks a lot healthier 🤣

    I love dehydrated veggies for soups, rice and pasta dishes. My spaghetti sauce has pepper, onions, squash, zucchini, asparagus, carrots, spinach and whatever else I decide to toss in. You just can't go wrong with veggies!

    Since being diagnosed with Diverticular Disease in October 22, I've struggled with eating certain vegetables. I've been trying my hand at dehydrating. I haven't done much because my machine isn't adjustable. But, doing veggies like this could really help me get more of them into my diet. Especially the powdered form. It might not hurt me. Thank you.

    And now you have Balance of Nature without the $90//month price tag! I make sure to add those things I won’t eat fresh, like kale, broccoli, and spinach, which are powerhouse foods. I love adding it to rice dishes. I not only do this, too, Darci, but I teach it to the students of all ages in a center for the blind! Yes, of course blind people can dehydrate food, too! I am, and I do! Cooked or blanched, dried and powdered, it can also be added to capsules for those who want it portable.

    How would you blanch the veggies before dehydrating?
    Before chopping or after?

      If you cut them up and blanched first. Or you could put this all in a skillet and lightly saute' it.

    Another question on storage. I have some pantry cans from Thrive. Would I be able to use those for a longer term storage if a moisture absorber was used?

      Do you mean once opened? Yes for some. But you can always put them into a jar and vacuum seal them, too.

    I heard that parchment has a coating on it. When you are trying to scrape off the veggies, does any of the coating come off?

      Not that I've experienced, but I don't use it (what you see me using the most here is fruit leather sheets that look like parchment). But it isn't water proof, so things with high moisture can stick to it.

      Some folks don't have freezer space.. like us , we have zero freezer space. This would be great to have on hand dried.

      how is it a waste? That powder is worth all that veg that's there on the counter already and can be used in ANYTHING I cook. My family doesn't eat vegetable soup, which would have been and even bigger waste. So I'd say I did a much better job of saving my food and using it for my family - thanks very much.

    I love dehydrating vegetables just like that. Add a little celery seed and salt mix with sour cream- vegetable dip mix!

    I was laid up for many weeks this winter and I used my dehydrated "left over" veggies in my big thermos pot with boiling water and some salt & pepper. I brought stuff to my bedside and had soup whenever I needed food. As I felt a little stronger I made things with pasta too.

    An idea or two - add a bit to stuffing, or even something like cornbread muffins. Add to sour cream to make a veggie dip (sort of a take-off of onion soup mix dip).

    Ive done cauliflower, broccoli, and kale, but thats all the veggies ive ever dehydrated. Gonna have to try this cause id love to get some added veggies in dishes. Especially cause my son hates veggies. This would be easy to mix in and he wouldnt even know haha.

    I will be trying this, for me nutrient deficient picky other half 😆
    Since I usually make meals for 3 or 4 portions, what amount of powder do you usually put per person?

      It is a personal preference. My kiddo can taste it in his Mac n cheese if I use more than a tablespoon, so you will have to experiment.

      Don't try to hide a full daya serving of veg into one dish. Smaller amounts in everything boost

    I sorta do this with the over abundance of greens in the spring/early summer - I grind it fine to use in gravies, soups/stews, etc. My kids always say "mom puts that sh.. in almost everything". Extra vitamins :)

    I appreciate this. I am on the edge of losing my job and I have been needing a strategy to have nutrition and have a lifetime history of wasting fresh vegetables and that has to stop. Can things like kale or spinach or other greens be added in? Do things dehydrate at the same rate?

    Haha, did you know we were all cleaning our refrigerators this weekend?! I totally get the "making plans", then whoops! Other priorities. Hope things are going better now. It's great to be able to take some of the stress out of life by salvaging what's still good and dehydrating it for later use. I thought I had more patience, but I've figured out that I prefer instant gratification when I rehydrate, lol. So I really appreciate the tips about doing some cooking or blanching first.     I agree with you regarding the silicone sheets. Everything sticks and it is difficult to get off. Thanks for the great tip for saving produce that may otherwise end up in the compost a few days later. I had not thought of doing this.

    The #1 thing I love about my dehydrator is that I don't throw out rotten vegetables any more! If I can't use them to cook with I can always dehydrate them and use them later. I am slowly building a cupboard like yours with various dried stock to use. I just love knowing I can try a new recipe that uses jalapeños without running to the store to buy them because I have some dried in my cupboard! I can buy a bunch of peppers on sale and dehydrate them for use whenever I want. It's so great!

    I am going to try this in the summer when I have so much veg! I use powdered mushroom, tomatos, courgette all winter long! the whole of the summer I have my dehydrator running of months at a time lol

    I like adding 2Tbs. To my hamburger when I’m making hamburgers , sloppy joes, hamb steak covered in gravy. I use the powder in my breading crumbs with my chicken breading. Adds great flavor and nutrition, of course soups, stews, roasts, baked chicken, with dry rubs too. The powder can be used on so much. I also have mushroom powder mixed in this too.

    I’ve done this for years, just froze it in snack sized bags as I don’t have a freeze dryer or dehydrator and can’t afford those machines. I added it to meatloaf, I put in a steam bag then added to mashed potatoes, I told the kids it was mashed potatoes with sprinkles. 😂 Yo can add it to so much.

      Parchment/baking paper/grease-proof paper, yes. Wax paper is not recommended.

    Seeing this list reminded me of the powdered stock /soup mixes I made once but also reminded me of 2 small bags of veg I'm wanting to use up soon for freezer space looks like itl be dehydrated then ground to a powder to be measured for the mixes :) thanks

    I have a round dehydrator I would have to cut the sheets differently. I have hardly used it. I was disappointed in the oranges I did. I also did a few other fruits and in the end, it was almost nothing there. The strawberries were like "where did they go"? ... But this looks like something I would really want to use. We love soups!

      Drying fruits seems to work for my allergies though. Can't have the fresh fruit without it being heated to 100°C, but after drying it, I can eat melons again! And lots of other fruit. Even though the remaining fruit are so small, they are delicious 😁

      You can! However, don't discount having convenience real foods on your shelves, either. I COULD dehydrate beef, but I prefer to have the freeze dried done for me and shelf-stable, than dehydrating it myself.

      @@ThePurposefulPantry Totally agree! I yearn to own a freeze dryer. In the meantime I am procuring freeze dried fruits and veg to see if the expense will pay off for me. I am gluten free/plant based/pescetarian I don't foresee ever wanting to freeze dry fish. Yuk. No way can I see reaching for that. Currently, I rely on Nutrient Survival for great freeze dried 15 year shelf foods and meals. Freeze dried holds on to so much more nutrients.
      Speaking of shelf stable, I have found the MOST incredible dairy product. It is hidden in plain sight, and we haven't even noticed. Aldi occasionally uses an outside brand when they don't have half and half to offer. In the cooler, right were the half and half and whipped cream. You will see a white rectangular box with blue font BYRNE Dairy. 6 month bbd currently. It is a quart and reasonably priced. (can't think what I paid). Cracks me up they have no idea they don't need to store it in the cooler. But grateful they are, once the secret gets out that will be snatched up. Shhhh. 🤫 don't tell TOO many people! 😉

    500 sheet of parchment on Amazon little bigger than my dehydrator trays, i just fold it of cut to correct size not hanging off the bottom. I have a worse time of stuff sticking to my leather trays than the paper

    Darcy, I have some dehydrated veggies from 2019. Can I still use them (for vegetable powder) or do you think that is too old?

      Only you can decide :) If they still taste okay - they are fine. You may notice a change in texture or taste, but if it still tastes fine. use it.
