    Hi John! Actually, it is better to use the egg white from a boiled egg because most of the hydrogen sulfide forms there. Hydrogen sulfide is the stuff that patinates. (Harold McGee's 2004 book : On Food and Cooking - The Science and Lore of the Kitchen). I also tested this out egg whites vs egg yolk etc on my blog, and McGee is right!

      Thank you for sharing this information. I never went to culinary school. And, I never did any research on eggs. I learned to use the yolks for patination from other jewelers. Thank you for providing the OJA with the scientific information on the correct use of eggs for this purpose.
