You should be able to find empty bottles randomly around - I found 2 different ones in the camp/main encampment so maybe search around? If you're not too far in, might be easiest to restart? Def keep bottles even after drinking them so you can refill!
So... You have to "craft" the water by activating the well and using the empty bottle! I was thinking you could equip the empty bottle and just go to the stream to fill it, how silly of me!

Does it go to a slot if your right click it? That or try dragging to a different slot!

Go back to well and craft again - you hang on to the bottle after drinking the water!
