  • In Tajikistan, bread is still baked in a beautiful, traditional way at Shamsullo Dustov’s house in Kumsangir-just 30 miles from the Afghan border. Much of the surrounding land is nonarable, so the homemade bread makes up a large part of peoples’ average daily caloric intake. Watch the process unfold in John Wendle's short piece.

    I saw this similar bread making style in a manga too! It's called A Bride's story by Kaoru Mori set in Kazakhstan, wonderful artstyle and story

    Our Kurdish folk use the same method to cook their bread.
    I'm not sure how it's actually written, but the bread is called Nan? (pronounced "non") which sounds similar to Indian naan bread, and the hole oven is called a "tandur"?
    All our cultures share much more than you might think. There is so much happiness to share in this world yet all we ever do is kill.

    interesting that she used a cushion rather than a metal pan... also, stamping it with a pattern to shape it and let the air escape: clever, and pretty!

    Many variations of cooking in a tandoor is found throughout south asia. The kindling is dried stocks of the cotton plant. when she was pinching the dough you might have noticed that it was wet. No smack no stick. i have seen people lose the bread it falls to the hot embers underneath.

    Each nation has its own way of making bread
    We make bread almost the same way but the oven is not buried in the ground

    Ahh. I saw this bread in the manga, A Bride's Story- that bit where they make a pattern in the loaf was in it. I assumed they baked them in a beehive clay oven, though, not a tandori.

    The name of the town is "Qumsangir" not "Kumsangir"
    "Qum" means sand "kum" does not have a good meaning

    Its neither amazing nor an art. Its an everyday chore in the Indian sub-continent.The oven is called Tandoor. All kinds of delicious foods are made with this Tandoor. Ex: Tandoor Chicken, Tandoori Naan (bread), Tandoori Lamb etc

      Anand Kumar Cooking is art.
      Anyone who says different can't cook.
      While I have no experience working with a tandoor and I have to admit that it's possible that baking Tajik style flatbread in a tandoor is as easy as falling off a log, every other experience I've had with baking would suggest otherwise.
      When it comes to western baking, at least, there's far more expertise required than amateurs can see.

    Some people in north India make bread the same way. In India, we call it MOTA ROTI or just ROTAA.

      ttt yeah but if National Geographic posted a video about how Indians make bread, other people from different nationalities will also say "there is nothing new about it at all we make the same bread, I'm going to unsubscribe" wouldn't you feel bad because they didn't respect your culture, when I was four years old I remember my mother doing the same exact thing like the lady in the video, I really love this video because it has some sort of aesthetics.
