Your flapjacks remind me of our NZ (and Oz?) national icon “Anzac biscuits”. They have oats and golden syrup, butter sugar, but also flour and baking soda. They were apparently able to be made by the ANZAC soldiers during WW1, or maybe they just survived the journey from home to Gallipoli! Appreciate all you give us Kate, you are my happy place!

That apron brings back memories, I made my husband a couple of real denim aprons as he was a milkman 50 years ago and they were very tough, no embroidery though just pockets !

Strangely, we make a similar recipe that we call Scotch Teas. My son actually had me send some to him from Georgia, USA to Afghanistan when he was in the Army stationed there. We use butter, brown sugar, a bit of salt and baking powder, and the oats. I never though of adding nuts or other things, so thanks for sharing.

I love to make Oatmeal Fudge/also known as No Bake Cookies here in U.S. Quick and easy treat. • 1/2 cup butter (doesn't matter if salted or unsalted) • 2 cups sugar • 6 tablespoons cocoa powder • 2 teaspoons vanilla extract • 1/2 cup milk • 1/2 cup peanut butter • 3 cups quick-cooking oats 1. Melt the butter in a saucepan over medium-high heat. 2. Add the sugar, cocoa powder, vanilla, and milk, cooking until the mixture comes to a boil. Boil for ONE minute and remove from heat. 3. Stir in the peanut butter and oats. 4. Drop by big spoonfuls onto a sheet of waxed or parchment paper or aluminum foil. Allow to cool until firm before serving. Leave out or refrigerate if not eating all right away. YUMMY!

Never heard of flap jacks. The rocky road is called "Arretjes cake" in The Netherlands. When I was a child my mother made it on saturdays. My sisters and I crushed the biscuits. We called it chocolat cake. About 15 years ago I learned the real name was Arretjes cake. "Arretje"was the name of a brand just after the war 2. It was not real butter but something cheaper and you could make this cake with it. And other things of course.
I had my first taste of 'flap jacks' when I went to Iona in May 2007 for a retreat at the Abbey. We did a 'pilgrim walk' around the island one afternoon, and finished up near one of the beaches, with hot tea and flap jacks. Here in North America the term "flap jack" is one used for large pancakes, so that's when I learned that the UK/Scots version was something quite different altogether. And they're YUMMY!! Perfect after a hike in the brisk air of the Scots islands! (or after a hard afternoon's packing Christmas boxes... )
