Is there a reason you open them other than enthusiasm? Is there any benefit to not opening them or letting them hatch themselves? Or, is there a benefit to helping them hatch? New to this type of channel.
Great question. One benefit is reducing the risk of a hatchling not being able to cut its way out, causing them to drown in the egg(although I hear a rare occurrence). Another is in the event they twist themselves with their own umbilical cord, which actually happened to me this season. But in the end, it's still a personal choice of the breeder as it doesn't affect the babies if you cut or not.
