I made it! First time.;) I didn't have cream. I substituted with 1 or 2% milk and a tbl. Butter. Came out just as good! Added a few sun dried tomatoes No sage, substituted with a pinch or two of herbs de province.
There is a great cheese shop in Hammonton, Bangliani's, that has cheese from all over the world as well as about a dozen blue cheeses and gorgonzola's. Sound like I am stopping on the way home.
Used to get this at a favorite restaurant. They also added some chicken, mushrooms, and tiny diced tomatoes. The restaurant closed. I tried making it, but it wasn’t even close lol. Hopefully this will be. Ty!
Peter, back in the day, I used to make this sauce with Asiago cheese, to which I added Sundried Tomato strips, sliced chicken strips, and garnished with chopped Parsley as an entre for those that didn't care for the pungency of Blue Cheese or Gorgonzola,
Peter, I made this dish the other evening and it is absolutely delicious! I do have a question about the leftovers. What is the best method for storing? I have some in the fridge, but the cream sauce seems a bit solid. Can you help me?
Hi Jackie, I would reheat it very gently, maybe add a splash of cream or milk or half and half to get it started. and make it a bit creamier. I'm glad you enjoyed it!

That is a great idea, I have never tried melting Asiago - Does it stay smooth or does it need help 🍸🍸
OH this is my kind of pasta!! I really prefer creamy gorgonzola over regular blue cheese. To me it seems a bit milder. This turned out great!
So then I shouldn't say after taking the glamor shot, we had a pig out and 2 bottles of wine.

I think you could skip the cream and use more pasta water.
Although possible, the cream helps keep the sauce smooth and thick - Thanks for watching 🍸🍸
I would think that it would water down the flavor of the cheese.
What could you use in place of sage, if anything?
Rosemary, Marjoram, Thyme, its really up to you. 🍸🍸
