I think Umar fought a perfect fight, he just gassed out, simple as. In other words, Umar is a better mixed martial artist. I don't know if you can work on your cardio like that, you can make small improvements but I don't think it's gonna be leaps and bounds to match Merab's pace the next time they meet. It takes a lifetime of work to get to that level. A lot of it is also attributed to mentality, genetics and comfortability to push forward in the octagon.
