    Did a Tri Tip brisket style on my CampChef today and it turned out fantastic! Surprised how long it took to cook for a small roast, just under 2.5 lbs nearly 8 hrs starting on high smoke (225) then set it to 250. When it was stalling I set it at 275, wrapped in butcher paper and took it to 205 IT. Rested in a cooler for an hour before tearing into it. If you haven’t done a Tri Tip brisket style by all means try it, you won’t be disappointed.

    We actually do cook tri tip like that here in California sometimes
    It actually is really fantastic way of cooking it
    It’s nice to change it up and it’s definitely not a disgrace to cook tri tip like a brisket

    I'm making a couple of these for a bbq this afternoon. They're already almost done and I won't have guests here for about 5 hours. Gonna try a long rest in the oven. I know that would be no problem with a brisket, but I've never tried it with this, so ill let you guys know how it goes. Got a butt going too, so even if they don't come out, I'll be alright.

      Update: No issues with the long rest. I should have pulled them off the smoker about 30 minutes earlier. They fell apart, but they were still delicious. Only had them on for about 5 hours, but I run my offset at 275, so that shortened the time. Still don't think 10 hours seems right at 225 though

      I was thinking of a longer warm rest, too. And, yes, pulling it off at a bit lower temp and maybe doing a foil wrap instead might help it be more moist.

    I bought a tri tip from a local butcher who has their own cattle (The Meating Place in Oregon) and asked for the fat cap still on. I'm glad I did because this recipe is perfect for my small household and looks amazing!!! Can't wait. Thanks for sharing your mad skillz with us!

    I do it all the time. Just got one yesterday. Never did one for 10 hours. Usually about 6-7. Looking forward to watch this video.

    Definitely my new favorite way to cook tri-tip. Mine cooked for about 6hrs. Tender, juicy, so much flavor. You won't regret trying it!!!

    I've done a few Tri-Tip in my Pit Boss vertical, cook a couple hours nice and low and then reverse sear to finish, simply great!

    Very versatile cut, and tri tip also makes great beef jerky. I'm in California and tri tip is easily found and often on special here, so. It's easier to experiment with.

    I cannot believe you posted this video yesterday!! I smoked a Tri Tip ...actually 2 of them... like a brisket on Saturday. I had ordered your beef rub and thought this was an excellent time to use it! It came out so nice and tender! After I was done I thought, "I ought to write Suzie and encourage her to do a video!" BAMMM THere it is...before I could even send you a note! Anyway... I loved how my tri tip came out and it was delicious!

    I made this tonight! It was perfect. I don't think I'll ever buy a flat or a whole packer again. I smoked it on a Kamado Joe at 225 for about seven hours total, including the rest. Thank you!

    Thank you, thank you. Made my 1st tri tip ever and it was amazing. So tender, beautiful smoke ring, perfectly cut, so tasty. Followed your video throughout. I used parchment paper instead as I had it on hand. Excited to try the reverse sear method too. Trying out your smoked chicken breast recipe tonight 😋

    I smoked two tritips yesterday on my Camp Chef Woodwind: One with the seasoning used here and the other a rub made from Jeff Phillips. It took 5 hours to get to about 160, and 3 hours to get to 200. Both were perfectly tender and tasty. I've got a lot of left-overs and have to figure out how to revive them for dinner tonight.

    I’m from Lubbock Texas and I have family in Livermore California. Went out there tried to buy a brisket nobody had one had to special order it so instead got a tri tip smoked it like a brisket came out great they were all shocked. Hooray for Texas!

      Costco Livermore usually has packer briskets. Love tri tip though

    Tri-tip is my favorite cut. I’m cooking one later on my new Pit Boss pellet smoker grill. Next trip to Costco though, I’ll be picking up one of their big tri-tips and using this video to cook it like a brisket!

    Great cook! I've cooked a few briskets that have turned out awesome, but never a tri-tip. Mainly because they are hard to find here in my little town. Recently I found out that my local meat shop started processing them and has them regularly now. I feel if I am going to take the time to smoke one like a brisket, I will do 2 of them...one traditional reverse sear and one low and slow. I feel it's only right since it will be my first time. I am finally able to do it this weekend. I can't wait!!

    When I don’t feel like cooking 16 hours I’d rather save a few hours of cook time than few dollars per pound haha. Done this before and it’s awesome.

    Tried this today. Got up early and smoked it for 8 hrs. Turned out great! Kids devoured it and barely left any scraps for the doggo. Next time I do this I might have to make two of them so I can have some leftovers!

    This last weekend I went to Costco and was able to find some fat cap in tritips. I decided to make one this last weekend, along with some baby back ribs and a pork butt. I did a simple SPG blend and smoked it on a combination of pecan and post oak on my lil' offset. It is phenomenal. My wife liked it better than any brisket I've made. It was juicier than any flat and not as fatty as the point tends to be and had a bit of a steak-like quality to it. I highly recommend it. Plus, I was able to get it done in time dinner and I didn't even have to get up before dawn.

    Tried it this past weekend, tri tip was moist and tender. Took a total of almost 9 hours, had two in my my smoker, each a little over 2 pounds. Deff would recommend and will do it again. Brisket here at Sam's Club are over 12 pounds, waay too much meat for just a weekend home cook. This is perfect for smaller family that does not need more than 10 pounds.

    I havnt tri tip in a long time but tommorow I'll be making 4 got lucky they were cheap and untrimed today, 1 is gonna be bourbon flavored with cherrys 2 dry rubbed last one need to think on

    If you want to get the tritop with a fat cap, try the large packages of tri-tip from Smart and Final. You get 5 tri-tips but they aren't trimmed the same way as Costco. I have had great success with these. Now I am going try your method!

    I get tri tip with the fat cap at Smart and Final in CA. They are not the best quality, but I tenderize with a Jacard and dry brine for 24 hours in the refrigerator. Perfect for this application.

    Been doing Tri Tip like a Brisket ever since Harry Soo did it. I doubted the concept. I was wrong, it is delicious. Nice smoke ring on that one.

    Similar to how I smoke tri tip except I turn up the heat at 250 and leave it for 3 hours and take it out and wrap it in butcher paper or aluminum foil and throw some honey and a tablespoon of butter and wrap it and back for 10 minutes then let it rest for 20 minutes and it’s ready to devour 🤤

      Came out pull apart delicious. Thank you for guidance and inspiration. This will be a new favorite. I live in California and prime tri-tip is around $20 for a 3 pounder. Perfect size for a family with some leftovers.

    Beef all depends on the piece of meat. I ended up pulling my prime brisket off at 198 the other day, because it was already falling apart. It didn't slice well, but I made some chopped beef better than anything I've had at any restaurant. Thanks to all these videos, I'll never pay someone to BBQ for me again. Got it covered... tacos? I'll let Hacienda San Miguel (Mobile, AL) make that Mole Poblano. I don't even wanna know the recipe.... I'll end up trying to change it... NO! BAD! *hanDSlap* Absurdly delicious!

    Up here in WA we have Smart Food Services. I picked up bulk tri tip $2.99 a lb. $60.00 got 5 briskets with fat caps still attacked. Trimmed them out and they average 3 1/2 lbs each. While I smoking them is nice, I prefer the reverse sear method.

    I followed your online recipe for a Tri Tip a few weeks ago, and it was perfect! It's a great substitute for brisket and prime rib.

    Here in Southern California almost every week I can find at least one supermarket that has Choice Tri Tip on sale for about $5.99 a pound. And even the “trimmed” one have the fat cap on, which I take mostly off because between the thick fat layer and the meat is tough silver skin that will not break down. Yes I usually cook it fast, or cut it into steaks and pan fry in a cast iron pan, but I do have a Rec Tec pellet smoker I do it on as well. I find about 2 hours is all it needs at 250 degrees. It gets enough smoke, stays juicy and medium (135) in temp. It is perfect. Your’s looks great, but if I got my smoker on for that long it won’t be for tri tip, I’d rather get a small brisket or even a chuck roast.

    Girrrrrlllll, you are brave wearing a white robe/coat. I'm not sure what you are wearing because it looks like a super cute coat. I probably would have had mustard squish all over me. You know that first squeeze out of the bottle that sounds like a f!@#! 😂🤣😜🙃 Love that your son made you breakfast! 😍 I've been trying to get my 6 year old niece into cooking/grilling. Unfortunately she isn't into 'food' and would rather eat cereal and yogurt. Drives me nuts. My Tri-tip only took 2.5 hours to smoke and then reverse sear. I only made it once and it was DELICIOUS! I cut it up and served it over a salad with cherry tomatoes that I smoked along side of it, Avocado, cucumber and a chimichurri dressing. It was outstanding. Wish I took better pics so that you could see it. Picture taking is not one of my strong points. Plus I usually forget until after people have already dug in. Thanks for the videos and being so cheerful!

      I come from Cali cen coast were it originated so I might be biased but I feel same thing about Brisket I much prefer Tri tip

      I first had tri-tip when I lived in the central valley of California and loved it. I now live in Oregon but I can still find tri-tips in some stores, but always in Costco. It’s my favorite cut of meat 👍🏼

      @@jamesdizzle420 Costco had them onsale and I picked up three full tri tips for $12 here in Nebraska. The first one I cooked sous vide and I HATED the brine that Costco had packed them in, so I went with the brisket cook today. I have high hopes for it, despite the fact I know it will still be too sweet because of the Costco packaging.
