Why disassemble all the components of a switched supply, if you can achieve exactly the same , only disassembling the exit toroidal transformer for modifying it and rewinding it for achieving the +/- 30 Volts required?

No dear you need less voltage around 3 to 5 and huge amps depending on the thickness of material to be welded. This one no good unless you redesign it.
How are you claiming 1000w? No ampere meter and no output voltage reading. Are you just imagining it can give that much? 2 X 30v X 40A = 2400w ????????? Stop dreaming.

The UC3843 is a flyback switching IC, and thus cannot be used for 1000W power supply.
The circuit can Easley preduce 1000w but there is no protection so if something goes wrong it goes boom and everything gets destroyed

These toroidial inductors are filtering sudden current spikes.
those are used for output dc ripple filtering. basically smoothing the voltage
