I am sooo doing this today. It's rainy out and I have not made Foccacia in years. I am sure mine will not be near as tasty as in the video, but I am inspired to collect some fresh spring water to see if it changes the outcome of the bread. :)))

Flour 1 part, water 0.65 parts, salt 0.02 parts. Thus for 1kg flour, use 650ml water and 20 grams of salt. Yeast you'll just have to get what you can and use the amount recommended. By "natural yeast" I'd say they probably have their own sourdough starter that has been kept by the bakery for a long time...
Sorry but I struggled with all 😢Puglian food compared to northern Italian. Pretty rough food, nothing too elegant. 5 trips to Italy, never livd there, but interrsted in regional food, and Puglian food was😊 not very good. Just my opinion.
