Hi Brenda, I recommend getting up to the part where you broil the dough for a couple minutes and then I would freeze it after that, would make it simpler to cover without messing around with all that sticky batter :)

For a very long time now our cheese of choice has been the Daiya dairy free block cheeses, specifically the 'Monterey Jack' & 'Medium Cheddar' styles. We aren't very big fans of the many other brands ... and we have certainly tried many. My wife recently brought home some of the 'Follow Your Heart' sliced cheeses, namely 'Provolone', 'American' & 'Mozeralla' ... and they are DELICIOUS. The website says they also have blocks available but haven't seen any near us yet ... those may very well be our new favourite though. Hi Shiffi, unfortunately that's nearly half the mix right there so I'd recommend against substitution for purposes of this recipe. Are you allergic to corn &/or potatoes? If so it's possible inspiration for a brand new recipe altogether :)
Hi Kristen ... good catch, I clearly hadn't had enough coffee when I recorded this. the correct ingredient is in fact active dry yeast, hence the proofing and such. Apologies for the confusion, buying extra coffee right now!

I recommend freezing right after the broiling stage, that way you can still bake it when ready and have it taste nice and fresh
